Strawsicles

Our A/C was broken over the weekend, so home sweet home became home sweat home.  I tried to think of it as a pore-cleansing spa weekend.  In an effort to beat the heat, I made some popsicles with long forgotten raspberries, strawberries and yogurt chilling in the back of the fridge (if I could fit back there, I would have chilled there too).  I used Molly's recipe here adapted from David Lebovitz's "The Perfect Scoop" which I talked about back when.

For my popsicle adaptation I used:

1 cup of raspberries
1 cup of strawberries, chopped
2 cups of non-fat yogurt (Molly says to use whole milk yogurt for flavor, non-fat was all I had on hand and they were plenty tasty, I assure you)
3/4 cup of sugar
1 tsp of lemon juice

1) Blend berries and yogurt together in a blender or food processor.  Add in the sugar and lemon and pulse until fully combined.



2) Pour mixture through a fine strainer/cheesecloth/flour sifter to separate the seeds from mixture.



3) Pour the de-seeded liquid into popsicle molds or shot glasses like Molly did.  I picked up six molds at Walmart for $6.  This recipe makes roughly 8 popsicles so I put some in shot glasses.

4) Set up in the freezer and leave alone for 4-5 hours.



5) When you want one, run the mold, shot glass portion under the faucet (cool to warm water) to loosen the popsicle.  Enjoy!
